Smokey Lemon Turmeric Grilled Chicken

Ingredients
- 1/2 cup Avocado oil, or any neutral oil
- 1/4 cup Coarse grain mustard
- 2 tbsp Fresh turmeric, grated or zested
- 3 cloves Fresh garlic, lightly crushed
- 2 tbsp Fresh lemon juice, plus 1 tbsp fresh lemon zest
- 1 tbsp Kosher salt, plus more as needed to taste
- 1 tbsp Smoked black pepper
- 1 2/3 lb Thin sliced chicken breasts
Instructions
- In a blender combine, oil, mustard, turmeric, garlic, lemon juice and zest, salt and smoked pepper. Blend until smooth.
- Place chicken into a plastic bag add marinade and mix to thoroughly coat chicken. Seal and refrigerate for at least 2 hours or overnight for best results.
- Preheat grill to medium high heat, between 375F and 400F.
- Spray grill with non-stick spray to keep chicken from sticking to grill. Grill chicken for 4 to 6 minutes per side or until chicken has an internal temp of at least 165F.
- Remove and allow to rest for 8 to 10 minutes. Garnish with a squeeze of fresh lemon juice before serving.
