Smoked Turmeric Spiced Tofu Caesar Salad

Ingredients

  • 14 oz Firm tofu, liquid drained and squeezed thoroughly with paper towels to dry
  • 2 tsp Smoky turmeric seasoning, or your favorite smoked seasoning, plus more as needed
  • 20 oz Hearts of romaine, 2 bags
  • 1/3 cup Roasted jalapeño pistachios, plus more as needed
  • 1/4 cup Grated Parmesan cheese, or as needed
  • 1/3 cup Caesar dressing, plus more as needed

Instructions

  1. Cut tofu into approximately 1/2-inch slices and season both sides liberally with turmeric seasoning.
  2. While tofu is marinating, place a non-stick sauté pan over medium heat.
  3. Add oil and allow to get hot for about 45 seconds to 1 minute before adding tofu slices. Sear on each side for approximately 4 to 5 minutes or until each side is nicely crispy.

  5. Remove from pan and allow to cool slightly while assembling salad components.
  6. In a serving bowl, add romaine, pistachios, Parmesan, and Caesar dressing and toss to combine. Season to taste and serve tofu slices over salad to garnish.
