Smoked Spicy Salsa

Serves 8
Ingredients
- 1 Jalapeño peppers, sliced in half lengthwise
- 1/4 tsp Ground black pepper
- 1/2 White onions, sliced in half
- 1 Smoked chili pequin
- 1 tbsp Extra Virgin Olive Oil
- 1/4 cup Fresh cilantro
- 5 Garlic cloves, left whole
- 1/4 tsp Ground cumin
- 1 tsp Kosher salt
- 1/2 Limes, juiced
- 6 Roma tomatoes, sliced in half
Instructions
- Preheat smoker to 250°F.
- In a large bowl, combine oil, tomatoes, white onion, jalapeño and garlic. Season with salt and pepper.
- Place vegetables directly on grate and smoke an hour.
- Remove vegetables from smoker and cool slightly.
- In the bowl of a food processor, combine vegetables, 3 cloves of garlic, piquin pepper, salt, pepper, cumin, cilantro and lime juice. Blend until smooth but not liquefied, about 15 to 25 seconds. Depending on size of garlic, add additional smoked cloves to taste.
- Chef's Note: Serve salsa over smoked chicken or with chips.
