Smoked Sausage Mac and Cheese

Serves 8

Ingredients

  • 16 oz Elbow macaroni or your favorite pasta
  • 4 Smoked sausage, diced into pieces
  • 1 Medium shallot, minced
  • 24 fl oz Evaporated milk
  • 1 cup Sharp cheddar cheese, shredded
  • 2 cups Colby Jack cheese, shredded
  • 1 tbsp Cornstarch

Instructions

  1. Bring a large pot of water to a boil and cook pasta according to package instructions. Drain and set aside.
  2. Place a deep sided pot over medium heat. Add sausage and shallots and stir-fry for 3 to 5 minutes or until onions are translucent.
  3. Add evaporated milk and bring everything to a simmer. *Be careful not to leave milk on stove unattended as it could boil over.
  4. While milk comes to a simmer, toss cheeses with cornstarch to just coat. Once milk is at a simmer add cheese and reduce heat to low.
  5. Whisk until smooth and sauce is thick and creamy. Pour over prepared pasta mix to combine and season to taste as needed.
