Smoked Salmon and Goat Cheese Mini Quiche

Ingredients

  • 30 Mini Fillo Dough Shells, (2 packages)
  • 4 Large eggs
  • 3 tbsp Heavy Whipping Cream
  • 1 tsp Ground Black Pepper
  • 1/2 tsp Fresh lemon zest, zest
  • 1.5 oz Cold Smoked Sockeye Salmon, cut into small pieces
  • 2 oz Goat Cheese
  • 2 tbsp Fresh chives, chopped

Instructions

  1. Preheat oven to 350°F. Place fillo cups in a mini-muffin tin or on a foil lined baking sheet (side by side so they don't fan out as they cook).
  2. Whisk together eggs, cream, thyme and lemon zest.
  3. Divide a few pieces of salmon into each cup. Pour egg mixture in each cup and top with cheese and chives. Bake for 8 to 10 minutes.
