Smoked Garlic Bulbs

- 4 Fresh garlic clove(s), whole unpeeled
Instructions
- Set up BBQ smoker: light coals and soak wood chips in water 30 minutes (apple wood or oak works great). Bring temperature of smoker between 150ºF - 185ºF.
- Place unpeeled whole garlic bulbs on metal pan or any grill safe pan.
- Place them into smoker once temperature is at least above 150ºF. Close lid and allow garlic to smoke at least 2 - 2 1/2 hours. It should be slightly soft and have turned a very light brown color.
- Once garlic is soft enough, remove from smoker to cool and refrigerate until ready to use. Use smoked garlic as substitute in any dish that calls for garlic.
