Smoked Chili Lime Brine

Ingredients

  • 1/4 cup Kosher salt
  • 2 Lime, zested
  • 1 tbsp Black pepper
  • 2 tbsp Crushed red pepper
  • 2 tbsp Smoked sweet Spanish paprika

Instructions

  1. In bowl with wooden spoon (or in morter and pestle) mix salt and lime zest until salt breaks down lime zest.
  2. Add remaining spices and mix well; mixture might be a little moist.
  3. Rub seasoning on turkey.
  4. Place turkey in a sealable container and completely submerge in cool water. Refrigerate over night.
  5. Chef's Note: Rub also works well as a seasoning on all types of poultry.
