Smoked Chili Lime Brine

Ingredients
- 1/4 cup Kosher salt
- 2 Lime, zested
- 1 tbsp Black pepper
- 2 tbsp Crushed red pepper
- 2 tbsp Smoked sweet Spanish paprika
Instructions
- In bowl with wooden spoon (or in morter and pestle) mix salt and lime zest until salt breaks down lime zest.
- Add remaining spices and mix well; mixture might be a little moist.
- Rub seasoning on turkey.
- Place turkey in a sealable container and completely submerge in cool water. Refrigerate over night.
- Chef's Note: Rub also works well as a seasoning on all types of poultry.
