Smoked Baked Potatoes

Ingredients

  • 1 Russet potatoes, 4 potatoes, poked with holes using a fork
  • 1/4 cup Extra virgin olive oil
  • 2 tbsp Kosher salt
  • 2 tbsp Adams Reserve Peppercorn & Garlic Rub

Instructions

  1. Preheat a grill or smoker to 250°F using hickory chips.
  2. Roll potatoes in oil and coat completely.
  3. Combine salt and seasoning in tray potatoes came in. Roll potatoes in seasoning until completely coated.
  4. Place potatoes directly on smoker and smoke 2 hours.
  5. Once soft, remove potatoes from grill and rest 10 minutes. Slice potatoes in half then place directly over flame and grill about 30 seconds per side.
  6. Serve potatoes with your favorite toppings like cheese, butter, green onion or pulled pork.
