  • 1 cup White onions, sliced

  • 1 cup Carrots, diced
  • 1 cup Celery stalks, diced
  • 1 cup Dry red wine
  • 1 tbsp Italian seasoning, plus more as needed
  • 1 cup Beef stock

Instructions

  1. Heat oven to 250˚F.
  2. Place brisket on a roasting pan and season it liberally with salt, pepper and Italian seasoning on both sides.
  3. Sprinkle carrots, celery and onions around brisket evenly. Add red wine and beef stock, cover roasting pan tightly with foil.
  4. Place in oven for 8 to 10 hours or until brisket is tender enough to pull apart but will still slice.
  5. Season to taste, then slice and serve.
  6. Chefs note: Once brisket is cooked, I like to drain cooking liquid into a sauce pot and reduce it by half over medium-high heat and season to taste, then serve sauce over brisket.
