Slow Cooker Pumpkin Spice Oats

Ingredients

  • 1 1/2 cups Steel cuts oats
  • 6 cups Vanilla soy milk
  • 15 oz Solid pack pumpkin
  • 1 tbsp Vanilla extract
  • 1/4 cup Maple syrup
  • 2 tsp Pumpkin pie spice
  • 1/4 cup Pecan pieces

Instructions

  1. Lightly spray the inside of a slow cooker with non-stick spray.
  2. Combine all ingredients excepts pecans in a bowl, mix well then transfer to the slow cooker.
  3. Set slow cooker to low, cover and cook 6 hours.
  4. Serve with crushed pecans on top.
  5. Chef's Note: For creamier oats, cook an additional 1 to 2 hours.
