Slow Cooker Chicken with Lemon Pepper Sauce

Ingredients

  • 1 cup Extra virgin olive oil
  • 1/2 cup Fresh lemon, juiced
  • 2 tbsp Red wine vinegar
  • 2 tbsp Peeled garlic cloves, minced
  • 1 1/2 tbsp Dried oregano
  • 1 tsp Kosher salt, plus more as needed
  • 1 tbsp Ground black pepper, plus more as needed
  • 2 1/2 lb Boneless, skinless chicken breast

Instructions

  1. In a small bowl, combine olive oil, lemon juice, red wine vinegar, garlic, oregano, salt and pepper. Whisk to just combine.
  2. Place chicken in crock pot and evenly pour lemon pepper marinade over breasts.
  3. Cover and cook 2 to 3 hours on medium or high until fall apart tender.
  4. Serve pulled chicken over rice or roasted veggies.
