Slow Cooker Charro Style Beans with Ham

Serves 8

Ingredients

  • 1 1/2 cups White onions, chopped
  • 3 cups Ham, diced
  • 14 oz Dried pinto beans
  • 1 tbsp Ground cumin
  • 1 tbsp Garlic powder
  • 1 tbsp Mexican oregano
  • 14.5 oz Canned fire roasted crushed tomatoes
  • 6 cups Chicken stock
  • 1 cup Green onion, chopped
  • 1/3 cup Fresh cilantro, roughly chopped
  • 4 Bay leaves

Instructions

  1. To a large crockpot, first add onions, ham, and dried beans.
  2. Then add all remaining ingredients and set crockpot to low setting. Place lid on and allow to cook for 6 to 8 hours or until beans are tender.
  3. Season to taste, and serve over rice for a complete meal if desired.
  4. Chef's Note: I like to add 1 serrano pepper cut in half to give some extra spice and flavor.
