Slow Cooker Charro Style Beans with Ham

Ingredients
- 1 1/2 cups White onions, chopped
- 3 cups Ham, diced
- 14 oz Dried pinto beans
- 1 tbsp Ground cumin
- 1 tbsp Garlic powder
- 1 tbsp Mexican oregano
- 14.5 oz Canned fire roasted crushed tomatoes
- 6 cups Chicken stock
- 1 cup Green onion, chopped
- 1/3 cup Fresh cilantro, roughly chopped
- 4 Bay leaves
Instructions
- To a large crockpot, first add onions, ham, and dried beans.
- Then add all remaining ingredients and set crockpot to low setting. Place lid on and allow to cook for 6 to 8 hours or until beans are tender.
- Season to taste, and serve over rice for a complete meal if desired.
- Chef's Note: I like to add 1 serrano pepper cut in half to give some extra spice and flavor.
