Slow Cooker Broccoli Cheese Soup

Ingredients
- 4 cups Broccoli florets
- 1 cup Fresh matchstick carrots
- 1 cup Yellow onions, diced
- 1 tbsp Garlic clove, minced
- 3 1/2 cups Chicken stock
- 8 oz Reduced fat cream cheese
- 2 cups Evaporated milk
- 1/2 cup Shredded low-fat cheddar cheese
- 1/4 tsp Kosher salt
- 1 1/2 tsp Ground black pepper
Instructions
- Place broccoli, carrots, onions, garlic, chicken stock and cream cheese into slow cooker. Cook on high for 2 hours.
- Working in batches, transfer 1/2 of the broccoli soup mixture to a blender, and pulse until smooth.
- Return mixture to crock pot along with evaporated milk.
- Cook 30 to 45 minutes longer then stir in cheese and cook until melted. Season with salt and pepper and serve.
