Slow Cooker Broccoli Cheese Soup

Ingredients

  • 4 cups Broccoli florets
  • 1 cup Fresh matchstick carrots
  • 1 cup Yellow onions, diced
  • 1 tbsp Garlic clove, minced
  • 3 1/2 cups Chicken stock
  • 8 oz Reduced fat cream cheese
  • 2 cups Evaporated milk
  • 1/2 cup Shredded low-fat cheddar cheese
  • 1/4 tsp Kosher salt
  • 1 1/2 tsp Ground black pepper

Instructions

  1. Place broccoli, carrots, onions, garlic, chicken stock and cream cheese into slow cooker. Cook on high for 2 hours.
  2. Working in batches, transfer 1/2 of the broccoli soup mixture to a blender, and pulse until smooth.
  3. Return mixture to crock pot along with evaporated milk.
  4. Cook 30 to 45 minutes longer then stir in cheese and cook until melted. Season with salt and pepper and serve.
