Slow Cooker Barbacoa

Unsaved Slow Cooker Barbacoa

Ingredients

  • 3/4 cup Beef broth
  • 1/4 cup Lime, juiced
  • 1 1/2 tbsp Barbacoa seasoning
  • 2 1/2 lb Beef cheek, cut into 2-inch chunks (can substitute chuck roast)
  • 1 White onion, diced
  • 1 Fresh cilantro, chopped
  • 2 Jalapeno peppers, seeds removed and chopped

Instructions

  1. Combine broth, lime juice, seasoning and meat in slow cooker.
  2. Cover and cook 6 to 8 hours. Meat is ready when it is easily pulled apart with two forks.
  3. Serve barbacoa over rice or in a tortilla.
  4. Top meat with chopped onion, cilantro and chopped jalapeños to taste.
  5. Chef's Tip: Leftover barbacoa goes great in breakfast tacos.
