Slow Cooked Chicken with Black Beans and Steamed Rice

Serves 6
Ingredients
- 1 tbsp Vegetable oil
- 4 Bone-in chicken breasts
- 1 Small white onion, chopped
- 2 tbsp Tomato paste
- 1 cup Red bell pepper, chopped
- 2 tbsp Fresh garlic clove, chopped
- 1 tsp Ground cumin
- 1/2 tsp Kosher salt
- 1/2 tsp Salt and pepper shaker
- 1 cup Reduced sodium chicken broth
- 1 cup Rice, cooked
- 15 oz No salt added black beans
Instructions
- Heat a large skillet to medium-high. Add oil and chicken breasts. Sear until skin is a nice golden color.
- Place chicken in a crock pot and add remaining ingredients except rice and beans. Cover and cook on low until meat is tender.
- Transfer chicken to a cutting board. Carefully remove bones and discard. Shred chicken and return to crock pot.
- Gently warm beans in a small saucepan.
- Serve chicken over rice and beans.
