Slow Cooked Balsamic Herb Chicken

Ingredients

  • 10 oz Brussels sprouts
  • 1 lb Baby red potatoes, whole
  • 1 lb Boneless skinless chicken breasts
  • 1 tbsp Whole grain mustard
  • 1 1/2 tbsp Italian seasoning
  • 1/3 cup Balsamic vinegar
  • 3 tbsp Maple syrup
  • 1/2 cup Reduced sodium chicken broth
  • 4 Fresh garlic clove(s), smashed
  • 1 Fresh rosemary

Instructions

  1. Place Brussels sprouts and potatoes in the bottom of a slow cooker.
  2. Place chicken on top of the potatoes.
  3. In a small bowl, combine mustard, seasoning, balsamic vinegar, maple syrup, chicken broth and garlic. Mix well then pour over chicken and vegetables.
  4. Place rosemary sprig over top of chicken, set slow cooker to low then cover and cook for 6 hours.
