Skillet Pork With Sweet Potatoes & Apples

Ingredients

  • 1 lb Pork Center Rib Chop Bone-In Thick, cut 3/8-inch thick
  • 1 Large sweet potato
  • 1 Medium white onion
  • 2 Medium Macintosh apples
  • 1 tbsp Unsalted butter
  • 1/8 tsp Salt
  • 1/8 tsp Ground Black Pepper
  • 1/4 tsp Ground Cinnamon
  • 1/2 cup Reduced Sodium Chicken Broth

Instructions

  1. Peel sweet potatoes and cut into 1/4-inch thick slices.
  2. If slices are larger than 2 inches in diameter, stack slices and cut in half.
  3. Cut onion in half and into 1/4-inch thick slices; cut apples into quarters and remove core, then into 1/4-inch thick slices.
  4. Melt butter in a large, deep skillet over medium-high heat.
  5. Season pork with salt and pepper. Brown pork chops 2 minutes per side. Remove chops to a plate.
  6. Add potato and onion to skillet; sauté 5 minutes.
  7. Stir in apples and cinnamon. Season with 1/4 teaspoon each salt and pepper and toss to coat.
  8. Pour in chicken broth, cover skillet and reduce heat to low. Simmer 10 minutes.
  9. Add chops to skillet with any juices that have accumulated on plate.
  10. Cover and cook 5 more minutes until potatoes are tender.
