Simple Vegetarian Chili

Ingredients

  • 16 oz Canned kidney beans
  • 1 1/2 cups White onion, chopped
  • 15 oz Canned diced tomatoes with basil garlic and oregano
  • 12 oz Canned whole kernel corn, undrained
  • 4 oz Canned fire roasted mild whole green chiles, undrained
  • 1 tsp Dried oregano
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 2 cups Water

Instructions

  1. Soak beans according to package instructions.
  2. Rinse and drain.
  3. Place soaked beans in a large soup pot.
  4. Add 2 cups of water with all the remaining ingredients.
  5. Bring to a boil.
  6. Reduce heat and simmer for 1 to 1 1/2 hours or until beans are tender.
