Simple Smoked Salmon Chowder

Serves 2

Ingredients

  • 2 tsp Grapeseed oil
  • 1/4 cup Shallot, very finely diced
  • 1/4 cup Red bell pepper, very finely diced
  • 1/2 cup Sweet corn, fresh or drained canned
  • 1 can Cream of poblano soup
  • 10.5 oz Half & half, just fill up empty soup can
  • 1.5 oz Lemon pepper smoked salmon, diced

Instructions

  1. Heat a pan over medium-high heat adding oil, shallots and red bell peppers to pan.
  2. Stir and cook until shallots soften and turn translucent, or about 3 to 4 minutes.
  3. Add corn, condensed soup, half and half and salmon. Bring to a simmer for 3 to 4 minutes, stirring constantly.
  4. Remove from heat, and sit for 10-15 minutes for flavors to come together. Season with salt and pepper to taste.
  5. Serve with a great crusty bread or toasted naan.
