Simple Simmered Meatballs

Ingredients
- 1 lb Extra lean ground beef
- 2 tbsp Garlic clove, chopped
- 1 tbsp Dried oregano
- 1 Egg
- 1/2 cup Old fashioned oats
- 2 tbsp Extra virgin olive oil
- 1 Red bell pepper, cored, seeded and thin sliced
- 1 Yellow bell pepper, thinly sliced
- 1 Green bell pepper, thin sliced
- 1/2 White onion, thinly sliced
- 3 cups Reduced Sodium Beef Broth, divided
- 1/4 cup Unbleached all purpose flour
Instructions
- Preheat oven to 375°F. Combine beef, garlic, oregano, egg, and oats in a large bowl. Form into 20 to 30 small meatballs and place on a baking sheet sprayed with non-stick cooking spray. Bake 20 minutes.
- Heat a large sauté pan on medium-high. Add oil, peppers, and onions, and sauté 5 minutes. Add 2 cups beef broth and bring to a simmer. In a separate bowl, whisk flour and remaining beef broth together until smooth. Stir into simmering onion mixture until thickened.
- Remove meatballs from oven and place in sauté pan with peppers. Stir to coat meatballs. Serve over rice, noodles or potatoes.
