Simple Chicken Fajita Salad

Ingredients

  • 6 oz Chicken Breast Chunks, drained
  • 1/4 Avocado, thin sliced
  • 2 tbsp Seasoned Vinaigrette, see recipe
  • 2 Red onion, rings separated
  • 1/2 cup Tomato, chopped
  • 2 tbsp Fresh cilantro, chopped
  • 1 tbsp Jalapeño pepper, chopped
  • 2 cups Iceberg lettuce, chopped

Instructions

  1. Layer chicken chunks, avocado slices, fajita vinaigrette, red onions, tomatoes, cilantro, jalapeños and chopped lettuce on a plate. Cover with plastic wrap and refrigerate until ready to serve. Toss salad before serving.
  2. For Work Lunch: Place salad in the same layers in an H-E-B Tough & Easy container. Keep refrigerated and toss before serving.
