Simple Butter Masala

Serves 4

Ingredients

  • 12 oz Butter masala simmer sauce, plus 1/4 cup water added to jar and shaken to remove all sauce
  • 1 1/4 lb Boneless skinless chicken thighs or breasts, diced small
  • 14.5 oz Extra Virgin Olive Oil, drained
  • 1 tbsp Garlic cloves, minced or zested
  • 2 tbsp Ghee clarified butter, plus more as needed
  • 13.5 oz Coconut milk, shaken well
  • 1 cup White onions, sliced

Instructions

  1. Place a medium sized Dutch oven or pot over medium-high heat. Add ghee and allow to get hot.
  2. Add chicken pieces, season liberally with salt and pepper, and cook until chicken just starts to get color.
  3. Add garlic and onions and continue to stir-fry until onions are soft. Stir in tomatoes, masala sauce and coconut milk.
  4. Cover pot and simmer 15 to 20 minutes until sauce just starts to thicken slightly.
  5. Garnish with cilantro if desired and season to taste. Serve over rice.
  6. Chef's Note: Heavy cream can be substituted for coconut milk if preferred.
