Simple Borracho Chicken

Ingredients

  • 1 Fresh whole chicken
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper
  • 12 oz Strong lager beer
  • 1 Small white onion, finely chopped
  • 1 Garlic clove, finely chopped
  • 7 oz Pickled jalapenos, juice only

Instructions

  1. Remove giblets, if any, from the body cavity of the chicken. Remove any excess fat or skin from the chicken.
  2. Thoroughly wash chicken with water inside and out and dry.
  3. Season the chicken inside and out with salt and pepper.
  4. Poor out half of the beer and fill the can with onion, garlic and jalapeño juice.
  5. Heat oven to 350°F.
  6. Place the chicken on beer can in cooking rack. Place rack on a baking sheet with lip.
  7. Bake the chicken for 1 1/2-2 hours or until meat thermometer inserted deep into thigh reads 180°F.
  8. Allow chicken to rest for 10 minutes before serving.
