Simple Borracho Chicken

Ingredients
- 1 Fresh whole chicken
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
- 12 oz Strong lager beer
- 1 Small white onion, finely chopped
- 1 Garlic clove, finely chopped
- 7 oz Pickled jalapenos, juice only
Instructions
- Remove giblets, if any, from the body cavity of the chicken. Remove any excess fat or skin from the chicken.
- Thoroughly wash chicken with water inside and out and dry.
- Season the chicken inside and out with salt and pepper.
- Poor out half of the beer and fill the can with onion, garlic and jalapeño juice.
- Heat oven to 350°F.
- Place the chicken on beer can in cooking rack. Place rack on a baking sheet with lip.
- Bake the chicken for 1 1/2-2 hours or until meat thermometer inserted deep into thigh reads 180°F.
- Allow chicken to rest for 10 minutes before serving.
