Unsaved Shrimp & Asparagus Frittata

Ingredients

  • 1 Hill Country Fare Butter Flavor No-Stick Cooking Spray
  • 1 lb Peeled & deveined shrimp
  • 1 cup Asparagus Spears, thawed and diced
  • 1/2 cup Green onion(s), sliced
  • 16 oz Liquid eggs
  • 1/2 cup Heavy Whipping Cream
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. Preheat oven 350°F.
  2. Coat a non-stick oven safe skillet with cooking spray.
  3. Sauté shrimp, asparagus, and green onions.
  4. Combine egg product, cream, salt and pepper in a bowl.
  5. Pour egg mixture over shrimp and veggies.
  6. Scramble slightly over medium heat.
  7. Place entire pan in oven and bake for 20 minutes.
