Shrimp and Avocado Toast

Unsaved Shrimp and Avocado Toast

Ingredients

  • 1/4 tsp Kosher salt
  • 4 Lemon(s), cut in half
  • 1 tbsp Extra virgin olive oil
  • 1/2 tsp Ground black pepper
  • 1/2 Red onion(s), thin sliced
  • 1 Large avocado(s), mashed
  • 4 slices Grain bread
  • 1 Fresh mango, sliced
  • 1/2 lb Fresh raw extra jumbo Gulf shrimp

Instructions

  1. Place lemons in a medium saucepan, add water to half full and bring to a boil.
  2. Add shrimp and blanch until pink and opaque. Set aside in a bowl then discard blanching water.
  3. Toast bread then spread with mashed avocado. Add a layer of mango slices followed by 3 to 4 shrimp per piece of toast.
  4. Sprinkle with red onion, salt, pepper and a drizzle of olive oil. Serve immediately.
