Shredded Chicken Tacos with Mole Rojo

Ingredients
- 1 lb Boneless skinless chicken breast
- 2 tbsp Canola oil
- 1/2 Medium white onion, large diced
- 1 Roma tomato, rough chopped
- 1 tbsp Caldo de tomate granulated bouillon
- 2 cups Water
- 1 Mole rojo
- 12 White corn tortillas
- 8 oz Queso Oaxaca, shredded
- 1/4 cup Cilantro, rough chopped
Instructions
- Heat 1 tablespoon of oil in a large skillet over medium heat.
- Season chicken with salt and pepper. Place in the hot skillet and sear for 3 minutes per side.
- Add onions, tomatoes, water, and bouillon. Gently stir just until evenly distributed. Cover, reduce heat, and simmer for 10 to 15 minutes.
- Once chicken is fork tender, remove to a plate or bowl to cool briefly. Meanwhile, turn heat to low and reduce remaining broth and vegetable mixture.
- When chicken is cool enough to handle, shred into smaller pieces. Return chicken to skillet, turn heat up to medium, and stir in mole rojo.
- Working in batches, heat a small amount of remaining oil in a separate skillet. Add a corn tortilla and top with a small amount of Oaxaca cheese and some shredded chicken.
