Seared Pork Fajita Tacos

Ingredients
- 12 oz Chopped ham, cut into 1/4 inch thick matchstick pieces
- 12 oz Faijta vegetable tray
- 1/4 tsp Fajita spice blend
- 6 Mixla tortillas
- 3/4 cup Medium pico de gallo
- 1/2 cup Mexican style blend shredded cheese
Instructions
- Place a medium sauté pan over medium-high heat. Spray hot pan with non-stick spray, add luncheon loaf and cook 6 to 8 minutes, tossing frequently to brown and crisp at least 1 side of each piece. Remove to a paper towel lined plate to drain.
- Return pan to heat and add fajita vegetables. Season with fajita seasoning and cook 3 to 4 minutes until onions are translucent. Add seared luncheon loaf and toss to combine. Remove to a heatproof dish and keep warm.
- Wipe out pan and return to heat. Warm tortillas in pan for 15 seconds per side.
- To assemble tacos, lay equal portions of meat and vegetable mixture in the middle of tortillas. Top tacos with 2 tablespoons of pico de Gallo and 1 tablespoon of cheese. Serve immediately.
