Seared Ginger Tofu with Cauliflower Rice

Ingredients
- 12 oz Thai style cauliflower rice
- 14 oz Extra firm tofu, drained
- 1/4 cup Ginger scallion cooking sauce
- 1/4 cup Green onions, thinly sliced
Instructions
- Prepare Tahi cauliflower rice per package instructions.
- Heat a small amount of oil in a large non-stick skillet set over medium-high heat.
- Drain and lightly dry tofu. Cut into 8 slices then carefully arrange in preheated skillet and cook for 3 to 4 minutes per side. Stir in cooking sauce, bring to a simmer, and remove from heat.
- Stir in cooking sauce, bring to a simmer, and remove from heat.
- Serve seared tofu over prepared cauliflower rice and top with green onions.
