Savory Spinach and Pepper Breakfast Muffin

Ingredients
- 10 oz Frozen chopped spinach, thawed and drained
- 4 oz Roasted yellow & red peppers, chopped
- 3 oz Reduced Fat Crumbled Feta Cheese, crumbled
- 1 cup Tomatoes, chopped
- 4 Large eggs, beaten
- 2 tbsp Extra Virgin Olive Oil
- 1 1/2 cups All Purpose Baking Mix
- 1 cup Low fat buttermilk
Instructions
- Preheat oven to 350ºF. Lightly grease a muffin tin with non-stick spray.
- Combine all ingredients in a large bowl and mix just until combined. If batter is too dry, add an additional 1/2 cup of buttermilk or water.
- Spoon batter into muffin cups. Bake 20 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly before serving.
