Savory Spinach and Pepper Breakfast Muffin

Ingredients

  • 10 oz Frozen chopped spinach, thawed and drained
  • 4 oz Roasted yellow & red peppers, chopped
  • 3 oz Reduced Fat Crumbled Feta Cheese, crumbled
  • 1 cup Tomatoes, chopped
  • 4 Large eggs, beaten
  • 2 tbsp Extra Virgin Olive Oil
  • 1 1/2 cups All Purpose Baking Mix
  • 1 cup Low fat buttermilk

Instructions

  1. Preheat oven to 350ºF. Lightly grease a muffin tin with non-stick spray.
  2. Combine all ingredients in a large bowl and mix just until combined. If batter is too dry, add an additional 1/2 cup of buttermilk or water.
  3. Spoon batter into muffin cups. Bake 20 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly before serving.
