Savory Soy Green Bean Casserole

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 6 Bacon slices, diced
  • 1 1/2 cups Diced white onions, 7 oz. container
  • 8 oz Mushrooms, sliced
  • 2 tbsp Unbleached all purpose flour
  • 1/3 cup Fischer & Wieser Four Star Provisions Soy Sriracha Glaze
  • 2 cups Whole milk
  • 8 oz Cream cheese, cubed
  • 1 cup Shredded Parmesan cheese, divided use
  • 2 lb Frozen cut green beans
  • 1 cup French fried Onions
  • 1/3 cup Blue Diamond Smokehouse Almonds, crushed

Instructions

  1. Preheat oven to 375ºF and grease a 9 X 9-inch baking dish.
  2. Place oil in a large non-stick skillet over medium-high heat. Add bacon to hot oil and cook until crisp and browned.
  3. Add onions and mushrooms and cook until onions are translucent and mushrooms are well browned. Dust the pan with flour and continue to cook for about 2 minutes, stirring constantly.
  4. Stir in soy glaze, milk and cream cheese, reduce heat to low and cook until mixture thickens. Add 1/2 of Parmesan cheese and frozen green beans. Stir to combine then transfer to prepared baking dish.
  5. Top with remaining Parmesan cheese, French fried onions and smoked almonds. Cover with foil and bake 30 minutes, then remove foil and bake and additional 15 minutes.
  6. Chef's Note: This can be made 1 to 2 days ahead of time, covered and refrigerated until ready to cook.
