Savory Mashed Sweet Potatoes with Thyme and Mascarpone

Ingredients

  • 3 lb Sweet potatoes, washed and dried
  • 8 oz Mascarpone Cheese
  • 4 oz Unsalted Butter
  • 2 tsp Fresh thyme, leaves chopped
  • 0.2 oz Fresh chives, minced small

Instructions

  1. Preheat oven to 350ºF.
  2. Place potatoes in a pan and evenly poke each potato 3 to 4 times with a fork. Cover pan tightly with foil.
  3. Bake 45 to 65 minutes or until potatoes are fork-tender. Cool slightly.
  4. When potatoes are cool enough to handle, peel and place in a medium-sized saucepan.
  5. Add mascarpone, butter, thyme, and chives, and mash until well combined. Cook over low heat until potatoes are heated through. Season with salt and pepper to taste.
  6. Once potatoes are warmed through and creamy remove from heat and serve. Season to taste as needed.
