Savory Mashed Sweet Potatoes with Thyme and Mascarpone

Ingredients
- 3 lb Sweet potatoes, washed and dried
- 8 oz Mascarpone Cheese
- 4 oz Unsalted Butter
- 2 tsp Fresh thyme, leaves chopped
- 0.2 oz Fresh chives, minced small
Instructions
- Preheat oven to 350ºF.
- Place potatoes in a pan and evenly poke each potato 3 to 4 times with a fork. Cover pan tightly with foil.
- Bake 45 to 65 minutes or until potatoes are fork-tender. Cool slightly.
- When potatoes are cool enough to handle, peel and place in a medium-sized saucepan.
- Add mascarpone, butter, thyme, and chives, and mash until well combined. Cook over low heat until potatoes are heated through. Season with salt and pepper to taste.
- Once potatoes are warmed through and creamy remove from heat and serve. Season to taste as needed.
