Sautéed Spinach with Chili and Garlic

Serves 4

Ingredients

  • 2 tbsp Avocado oil, plus more as needed
  • 1 Large red jalapeño, sliced thinly, approximately 2 tbsp
  • 1 tbsp Peeled Garlic Cloves, thinly sliced
  • 16 oz Baby spinach
  • 1 tsp Sherry vinegar
  • 1 1/2 tbsp Liquid aminos, plus more as needed to taste
  • 1/4 cup Pistachios Roasted and Salted, crushed or chopped

Instructions

  1. Set a large pot over medium-high heat, add oil and allow to get hot.
  2. Add red jalapeños and garlic, sauté until garlic is just fragrant. Add spinach and sauté until it starts to wilt slightly.
  3. Add sherry vinegar and liquid aminos, raise heat to medium-high and continue to sauté until most of the liquid evaporates.
  4. Turn off heat, remove from pan, season with more liquid aminos if needed and garnish with crushed pistachios.
