Serves 6

Ingredients

  • 1 cup Center cut bacon, diced or cut into lardons
  • 1 cup White onions, diced
  • 1 tbsp Garlic cloves, minced
  • 1/2 cup Honey pecan vinaigrette
  • 1 tsp Ground black pepper
  • 2 cups Gold beets, greens removed, cleaned and chopped
  • 1/2 tsp Kosher salt
  • 4 cups Mustard greens, chopped

Instructions

  1. In a large sauté pan or pot, add bacon and cook 3 to 4 minutes to render out some fat.
  2. Add garlic and onions, and stir-fry another 5 to 6 minutes.
  3. Add mustard greens, beet greens, salt, pepper, and vinaigrette. Stir-fry until greens start to wilt a bit and liquid starts to reduce, about 10 minutes.
  4. Reduce heat to medium-low, cover and cook another 15 to 20 minutes (most of liquid should be evaporated). Serve hot.
