Sausage Stuffed Bread Loaf

Ingredients

  • 1 cup Fresh white onion(s), chopped
  • 1 tsp Ground black pepper
  • 16 oz Smoked pork sausage
  • 1/2 cup Grated parmesan cheese
  • 1 cup Shredded colby and Monterey Jack cheese
  • 4 Peeled garlic cloves, minced
  • 1/3 cup Fresh Italian parsley, loosely packed
  • 5 tsp Dijon mustard, plus 1 tablespoon
  • 2 French stix bread
  • 2 Large eggs, beaten
  • 1/3 cup Olive oil

Instructions

  1. Heat oven to 350°F.
  2. Split bread horizontally. Hollow out each half from center of loaf; leave 1/2-inch border at sides and bottom.
  3. Place bread removed from loaves in blender or food processor; pulse to make fine crumbs. Set loaves and crumbs aside.
  4. Heat large skillet over medium-high heat. Add sausage, onion and garlic. Brown sausage 6 to 8 minutes until no longer pink; break sausage into fine crumbles with edge of cooking spoon.
  5. Remove skillet from heat. Stir in breadcrumbs, eggs and mustard.
  6. Place following ingredients in blender or food processor: reserve mustard, cheeses, parsley, olive oil, and pepper. Pulse to chop parsley and blend ingredients.
  7. Spread mixture evenly over insides of loaves and spoon one-fourth sausage mixture into each cavity.
  8. Put halves back together. Wrap each loaf in foil and seal tightly.
  9. Place loaves on baking sheet; bake 30 minutes, or until bread is crusty and filling is hot. Let stand 2 minutes.
  10. Cut into 3/4-inch thick slices and serve.
