  • 5 Large eggs, beaten
  • 1 cup Mexican style shredded cheese

Instructions

  1. Cook sausage in a non-stick pan, breaking it up into crumbles with a wooden spoon as it cooks.
  2. When sausage is almost done, add eggs and cook together until the eggs are cooked.
  3. Place cheese on top and heat until melted.
  4. Divide sausage and eggs into 4 bowls and garnish with your favorite hot sauce or Pico de Gallo.
