Sausage Avocado Toasts

Ingredients

  • 1/2 cup Queso fresco, crumbled small
  • 2 Large avocado, pits removed and flesh scooped out
  • 2 tbsp Limes, fresh juice
  • 12 oz Mild breakfast sausage
  • 1/4 cup Green onions, diced or minced small

Instructions

  1. Place a non stick pan over medium heat. Add sausage, crumble and cook until just starting to brown and crispy. Approximately 8 to 10 minutes. Set aside to cool.
  2. Meanwhile, place avocados in a bowl along with green onions and lime juice. Whisk to combine until just chunky and season to taste.
  3. To serve, toast bread and spread a layer of avocado on each followed by crumbled sausage and garnish with queso fresco.
  4. Chef's Note: My favorite way to serve these is to garnish with chopped roasted red peppers, diced jalapeños and salsa on top.
