Sausage and Tater Tot Frittata

Ingredients

  • 12 oz Fresh sage sausage
  • 8 Large eggs
  • 1/2 cup Half & Half
  • 2 cups Reduced fat Monterey jack cheese, shredded
  • 3 cups Potato puffs, thawed

Instructions

  1. Preheat oven to 400ºF.
  2. In a large oven safe cast iron skillet set over medium-heat, cook and crumble sausage until slightly crispy and no longer pink. Drain off excess fat.
  3. Meanwhile, combine eggs, half & half, and cheese. Whisk to combine and pour over sausage, smooth out egg mixture with spatula to distribute evenly.
  4. Top with tater tots and bake 30 to 45 minutes, or until eggs are set and tater tots are crispy. Cool before cutting and serving. Season to taste as needed.
  5. Chef's Note: I like to garnish with chopped chives just before serving.
