Sausage and Spinach Breakfast Taquitos

Ingredients
- 8 oz Ground Turkey 85% Lean
- 9 oz Baby Spinach
- 6 oz Pico de gallo
- 8 Large Eggs, beaten
- 16 White Corn Tortillas
- 1/2 cup Reduced Fat Mexican Style Cheese, Shredded
Instructions
- Preheat oven to 400ºF. Line a sheet pan with foil then set aside.
- Cook sausage in a large skillet over medium-high heat, breaking up with a spoon as it cooks.
- Once sausage is cooked through, add spinach and pico de gallo. Sauté briefly until spinach is wilted.
- Add in eggs and continue to cook until they just start to get firm. Remove from heat and set aside.
- Fill tortillas with egg and spinach mixture and sprinkle with cheese. Roll tightly and place seam side down in prepared pan. Continue until all tortillas are filled and filling is used up.
- Lightly spray tortillas with cooking spray then bake 15 minutes or until crisp. Remove and serve immediately.
