Sausage and Gravy English Muffin Sandwich

Serves 4
Ingredients
- 8 oz Fresh Sage Sausage, form into 1/2-inch thick patties the width of an English muffin
- 2 tsp Unsalted butter
- 2 tbsp All Purpose Flour
- 1/4 cup Heavy Whipping Cream
- 1 1/4 cups Whole Milk
- 1 tsp Ground Black Pepper
- 4 English muffins, sliced in half
Instructions
- Place a medium sauté pan over medium-high heat and brown sausage patties about 2 to 3 minutes on each side or until well browned and cooked through. Transfer to a plate and keep warm.
- To same pan, add butter and once melted, add flour and whisk until slightly browned.
- Add cream and milk, and whisk until gravy thickens, about 5 minutes. Adjust temperature as needed and season with salt and pepper.
- While gravy thickens, toast English muffin halves in oven or toaster.
- Spoon gravy into nooks and crannies of bottom slice of English muffins then top with sausage patty and additional gravy as desired.
- Chef's Note: Add red pepper flakes or additional herbs like parsley or sage to gravy for a more flavorful breakfast sandwich.
