Saucy BBQ Potatoes and Corn

Ingredients

  • 1 lb Frozen Baby Smokehouse Potatoes
  • 1 1/2 cups Frozen corn kernels
  • 1 tbsp Unsalted butter
  • 2 tbsp Slices, fully cooked bacon, rough chopped
  • 1/2 cup BBQ Sauce
  • 2 tbsp Green onion(s), green tops, sliced thin

Instructions

  1. Microwave potatoes for 4 minutes in their packaging. In a medium microwave safe bowl stir together corn, butter, bacon, and bbq sauce, and cook for 2 minutes in microwave.
  2. Mix potatoes and corn mixture together and toss gently with spoon and garnish with green onions. Season with salt and pepper to taste if desired.
