Santa Maria Style Smoked Brisket

Ingredients

  • 2 tsp Ground cumin
  • 2 tsp Paprika
  • 1/2 tsp Cayenne pepper seasoning
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Chili powder
  • 1 tbsp Brown sugar
  • 1 tbsp Ground black pepper
  • 1 1/2 tbsp Kosher salt
  • 5 lb Trimmed brisket flat cut

Instructions

  1. Preheat smoker to 225ºF.
  2. Combine all dry seasonings together and rub brisket to coat completely. Allow to sit at room temperature for 30 minutes while smoker heats to temperature.
  3. Place brisket into smoker with a pan of hot water underneath or next to brisket for moisture. Close smoker and maintain heat adding wood as needed.
  4. Smoke for 6 hours, then wrap in foil and continue to cook an additional 1 to 2 hours until brisket is tender. Allow to rest before carving.
