Santa Maria Style Smoked Brisket

Ingredients
- 2 tsp Ground cumin
- 2 tsp Paprika
- 1/2 tsp Cayenne pepper seasoning
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Chili powder
- 1 tbsp Brown sugar
- 1 tbsp Ground black pepper
- 1 1/2 tbsp Kosher salt
- 5 lb Trimmed brisket flat cut
Instructions
- Preheat smoker to 225ºF.
- Combine all dry seasonings together and rub brisket to coat completely. Allow to sit at room temperature for 30 minutes while smoker heats to temperature.
- Place brisket into smoker with a pan of hot water underneath or next to brisket for moisture. Close smoker and maintain heat adding wood as needed.
- Smoke for 6 hours, then wrap in foil and continue to cook an additional 1 to 2 hours until brisket is tender. Allow to rest before carving.
