San Antonio Grilled Chicken Club

Ingredients
- 4 Seasoned boneless skinless chicken breast
- 1 fl oz Extra virgin olive oil
- 8 Uncured black pepper bacon, chopped
- 1/2 cup White onions, peeled and thin sliced
- 8 Mild cheddar cheese, thin slices
- 8 slices Slices whole grain chia seed bread
- 1 Heirloom tomatoes, cored and sliced thin
- 1 Large avocado, peeled, pitted and sliced
- 1/2 cup Mild guacamole
Instructions
- Preheat grill to 375°F. Grill chicken breasts 5 minutes per side, or until they reach an internal temperature of 165°F. Set aside.
- Add olive oil to a sauté pan placed over medium heat. Add bacon and onions and cook 5 minutes or until bacon is crispy and onions are translucent. Remove pan from heat.
- Place a slice of cheese on each slice of bread and grill bread-side down for 1 minute or until bread is grill-marked and cheese is melted. Remove to a cutting board.
- Grill tomato slices for twenty seconds then remove from heat.
- To assemble sandwiches, lay out 4 grilled bread and cheese slices and top each with 2 heaping tablespoons of sautéed bacon mixture, chicken, tomato, avocado and a spoonful of fresh guacamole. Finish with remaining grilled bread slices.
