Salt & Black Pepper Crusted Baby Red Potatoes

Ingredients
- 3 lb Medium sized red potatoes, approximately 7 to 9
- 2 tbsp True Texas BBQ Salt & Pepper Blend, plus more as needed to taste after cooking
Instructions
- Place potatoes in a large Dutch oven or larger non-stick pot with a tight fitting lid.
- Fill pot with water until potatoes are just barely submerged or covered in water.
- Add salt & pepper blend and gently stir to evenly incorporate into water.
- Place over high heat and bring to a rapid boil. Gently shake pot from time to time to ensure potatoes don't stick to bottom of pan.
- Continue to boil until liquid has almost completely evaporated (less than a few tablespoons).
- Turn off heat, cover and allow to steam for 10 minutes.
- Once potatoes are tender, remove lid, and serve as is or with your favorite condiments. These can also be mashed for a simple, flavorful side dish.
