Salsa Macha Verde Slaw

Ingredients
- 1 Fresh jalapeño, stem removed
- 1 Serrano pepper, stem removed
- 3 tbsp Grapeseed oil
- 1 tbsp Pepitas
- 1 tbsp Unsalted peanuts
- 1 tsp Kosher salt
- 8 oz Shredded cabbage
- 3 oz Cherry tomatoes, sliced
- 1 tsp Fresh lime juice
- 3 oz Mexican-Style Sour Cream
Instructions
- To make Salsa Mancha Verde, place jalapeño and serrano pepper in a food processor and pulse until finely chopped. Transfer to a small bowl.
- Set a small pan over medium heat, add oil and heat for about 2 to 3 minutes until it shimmers. Add pepitas and fry until they start to brown, about 1 to 2 minutes Use a slotted spoon to transfer to a food processor bowl. Fry the peanuts in the same oil for 1 to 2 minutes until they begin to brown. Remove with a slotted spoon to the food processor.
- Pulse nuts until finely chopped then add to the chopped peppers. Carefully pour frying oil into the bowl. Add salt and stir to combine.
- In a large bowl combine shredded cabbage with sliced cherry tomatoes, salsa macha verde, lime juice, and Mexican sour cream. Toss to combine.
