Instructions

  1. To make Salsa Mancha Verde, place jalapeño and serrano pepper in a food processor and pulse until finely chopped. Transfer to a small bowl.
  2. Set a small pan over medium heat, add oil and heat for about 2 to 3 minutes until it shimmers. Add pepitas and fry until they start to brown, about 1 to 2 minutes Use a slotted spoon to transfer to a food processor bowl. Fry the peanuts in the same oil for 1 to 2 minutes until they begin to brown. Remove with a slotted spoon to the food processor.
  3. Pulse nuts until finely chopped then add to the chopped peppers. Carefully pour frying oil into the bowl. Add salt and stir to combine.
  4. In a large bowl combine shredded cabbage with sliced cherry tomatoes, salsa macha verde, lime juice, and Mexican sour cream. Toss to combine.
