Unsaved Salmon with Pistachio-Basil Butter

Ingredients

  • 1 Fresh asparagus, rinsed, trimmed
  • 1 Parchment paper, cut into 4 large pieces
  • 4 Salmon fillets, 1 1/2 inch thick
  • 1 cup Pistachios, shelled, roughly chopped
  • 2 tbsp Fresh basil, chopped
  • 2 Garlic clove, minced
  • 2 tbsp Unsalted butter, divided
  • 1 Lime, quartered
  • 1/8 tsp Kosher salt

Instructions

  1. Preheat oven to 400°F.
  2. Divide asparagus evenly among parchment paper. Place salmon fillets, skin side down, over asparagus.
  3. In a medium bowl, mix pistachios, basil, garlic, and 1 teaspoon butter. Evenly distribute mixture over salmon.
  4. Fold parchment paper into a pouch and bake 10 to 12 minutes or until fillets are just opaque in the center.
  5. Serve with lime wedge and salt to taste.
