Salmon with Pistachio-Basil Butter

Ingredients
- 1 Fresh asparagus, rinsed, trimmed
- 1 Parchment paper, cut into 4 large pieces
- 4 Salmon fillets, 1 1/2 inch thick
- 1 cup Pistachios, shelled, roughly chopped
- 2 tbsp Fresh basil, chopped
- 2 Garlic clove, minced
- 2 tbsp Unsalted butter, divided
- 1 Lime, quartered
- 1/8 tsp Kosher salt
Instructions
- Preheat oven to 400°F.
- Divide asparagus evenly among parchment paper. Place salmon fillets, skin side down, over asparagus.
- In a medium bowl, mix pistachios, basil, garlic, and 1 teaspoon butter. Evenly distribute mixture over salmon.
- Fold parchment paper into a pouch and bake 10 to 12 minutes or until fillets are just opaque in the center.
- Serve with lime wedge and salt to taste.
