Salmon Burgers

Serves 4

Ingredients

  • 4 Salmon burgers
  • 1/2 cup Baby spinach
  • 1 tbsp Stone ground mustard
  • 4 slices Monterey jack cheese, sliced
  • 1 Large Haas avocado(s), cut into thin slices
  • 4 Kaiser rolls
  • 1/2 cup Light mayonnaise
  • 1 cup Mango pico de gallo, drained

Instructions

  1. Cook salmon burgers according to package directions.
  2. Top with cheese after turning to second side.
  3. Heat bread, if desired.
  4. Combine pico de gallo with mayonnaise and mustard; spread mixture over cut sides of rolls or sandwich thins.
  5. Place salmon patties, topped with avocado slices, in between "buns."
  6. Add spinach, if desired.
  7. Press together gently and serve.
