Rosemary Truffle Potatoes

Ingredients
- 16 oz Frozen baby whole potatoes, thawed and cut in half lengthwise
- 1/4 cup Extra virgin olive oil
- 1 tsp Truffle Salt, or as needed to taste
- 1 tsp Ground black pepper, plus more as needed
- 1 1/2 tbsp Fresh Rosemary, roughly chopped, or as needed
- 1/4 cup Grated Pecorino Romano
Instructions
- Preheat broiler to high; set oven rack to sit 6 to 8 inches below broiler. Line a sheet pan with thick foil and set aside.
- Place potatoes into a bowl along with olive oil, truffle & salt, black pepper and rosemary. Toss well to coat.
- Transfer seasoned potatoes to prepared pan. Place under broiler and roast for 8 to 10 minutes.
- Once potatoes look nicely crisp or roasted, flip carefully and cook an additional 6 to 8 minutes or until all potatoes are crispy and starting to slightly burn.
- Remove to a serving dish and toss with Pecorino Romano while hot. Serve immediately. Season to taste with more truffle salt as needed.
