Rosemary Pork Cacciatore

Ingredients
- 1/4 cup Extra virgin olive oil, divided use
- 1 tbsp Adam's Reserve Roasted Garlic and Herb Seasoning
- 1 1/2 lb Thick-cut, bone-in pork chops, about 2 lbs.
- 1 cup Carrots, thinly sliced
- 1 cup Red onions, thinly sliced (about 1 cup)
- 1/2 Large red bell pepper, thinly sliced (about 1 cup)
- 1 cup Mushrooms, sliced (about 4 oz.)
- 3 Medium twigs of fresh rosemary
- 1 pt Select sweet tomatoes, cut in half
Instructions
- Preheat oven to 350ºF. Heat a large oven-safe skillet over medium-high heat.
- Rub half of oil on pork and generously sprinkle seasoning on both sides. Add to hot pan and briefly sear each side just to a golden brown. Remove pork from pan and reserve on a plate.
- Add remaining oil, onions, peppers, mushrooms, and rosemary to skillet. Sauté until onions start to soften. Remove from heat and stir through tomatoes and pan sauce.
- Nestle pork chops in skillet around the veggies. Place in oven and roast for 10 minutes or until internal temperature is 145ºF. Remove from oven and serve warm.
