Roasted Sweet Potatoes with Adobo Pesto

Ingredients
- 7 oz Chipotle peppers in adobo sauce
- 1 cup Fresh cilantro, leaves and tender stems only, lightly packed
- 1/3 cup Roasted salted pepitas
- 1 Peeled garlic, approximately 1/8 of an ounce
- 2 tbsp Fresh squeezed lime juice
- 1/2 cup Extra virgin olive oil, divided use
- 2 lb Sweet potatoes, approximately 4 medium, peeled, diced medium to small
- 1 tsp Ground cumin
- 1/3 cup Grated cotija cheese, as needed to garnish
Instructions
- Preheat oven to 400ºF. Line a sheet pan with parchment paper and set aside.
- Pour chipotle peppers in adobo into a strainer, gently pressing all the liquid through the strainer so only the pepper pulp remains.
- Discard pulp and pour liquid into a food processor along with cilantro, pepitas, garlic, lime juice and 1/4 cup of olive oil.
- Pulse until smooth, then refrigerate pesto until ready to use to allow flavors to marinate.
- In a large bowl add potatoes, remaining 1/4 cup of olive oil plus cumin, and a generous pinch of salt and pepper. Toss well to coat thoroughly.
- Pour potatoes evenly onto prepared sheet pan and roast for 35 to 45 minutes or until potatoes are soft and starting to caramelize.
- Remove from oven and allow to cool slightly before adding enough pesto to just coat potatoes. Toss gently and garnish with Cotija cheese and more cilantro if desired.
