Roasted Sweet Potatoes with Adobo Pesto

Ingredients

  • 7 oz Chipotle peppers in adobo sauce
  • 1 cup Fresh cilantro, leaves and tender stems only, lightly packed
  • 1/3 cup Roasted salted pepitas
  • 1 Peeled garlic, approximately 1/8 of an ounce
  • 2 tbsp Fresh squeezed lime juice
  • 1/2 cup Extra virgin olive oil, divided use
  • 2 lb Sweet potatoes, approximately 4 medium, peeled, diced medium to small
  • 1 tsp Ground cumin
  • 1/3 cup Grated cotija cheese, as needed to garnish

Instructions

  1. Preheat oven to 400ºF. Line a sheet pan with parchment paper and set aside.
  2. Pour chipotle peppers in adobo into a strainer, gently pressing all the liquid through the strainer so only the pepper pulp remains.
  3. Discard pulp and pour liquid into a food processor along with cilantro, pepitas, garlic, lime juice and 1/4 cup of olive oil.
  4. Pulse until smooth, then refrigerate pesto until ready to use to allow flavors to marinate.
  5. In a large bowl add potatoes, remaining 1/4 cup of olive oil plus cumin, and a generous pinch of salt and pepper. Toss well to coat thoroughly.
  6. Pour potatoes evenly onto prepared sheet pan and roast for 35 to 45 minutes or until potatoes are soft and starting to caramelize.
  7. Remove from oven and allow to cool slightly before adding enough pesto to just coat potatoes. Toss gently and garnish with Cotija cheese and more cilantro if desired.
