Roasted Sweet Potatoes & Apples

Ingredients

  • 2 lb Sweet potato, peeled and cut into 1/4 inch round slices
  • 1 lb Granny Smith apple, peeled, cored & sliced
  • 1 cup Yellow onions, chopped
  • 2 tbsp Fresh ginger root, fine chopped
  • 2 tbsp Olive oil
  • 1/4 cup Zero calorie sweetener with saccharin
  • 1/4 tsp Ground cinnamon
  • 1/4 tsp Cayenne pepper
  • 1/8 tsp Kosher salt

Instructions

  1. Heat oven to 400°F.
  2. Line a roasting pan with foil and spray with nonstick cooking spray.
  3. Combine all of the ingredients in a large bowl and season with salt.
  4. Spread the mixture in the prepared roasting pan and roast for 1 hour, stirring every 15 minutes. Serve immediately.
